Things to Do On Jost
Looking to spend a day over on Jost - other then the soggy dollar what can we get into over there? Any hikes? Must See beaches?
Here's a link which will give you some ideas:

If you are just wanting a day trip you can also go on Limnos.

Dolphin Water Taxi also does a day trip which seems pretty reasonable although I believe they go directly to and fro and don't stop for any snorkeling. I've noticed a lot of recent posts on various forums from people who just want to go to Jost for the day without all the stops en route for snorkeling and who swear by the public ferry. Now that the operators have added more days to their schedule (see link on the travel forum under "Quick Links" top right of page) it's made planning much easier. Sounds as though the OP already has that part worked out but it's worth adding in case others might have the same idea.
Jost is all about avoiding overscheduling. You can do the walk over the hill from the ferry dock to Ivan's- a killer view into White Bay. Get a water at Sugar n Spice snack bar right at the ferry cuz it's a hot climb. From Ivan's walk the trail over to Soggy $, a hot dog at Jewel's is my guilty pleasure. If Sat, Reuben Chinnery plays at One Love, if Sun @ Soggy $. He's incredible! I take the ferry to enjoy The whole day, day trippers only get a couple hours,
