Gourmet sausages on potato bread buns created on St Thomas with local produce for condiments. Veggie sausage option. Food I saw others eating looked amazing, but I had just eaten. Hoping to try soon. Staff was very friendly and helpful.

Yes, it looks horrible, but business licenses and leases don't require that your business have an appealing look, unfortunately. You can tell them you're not pleased with their look when you try their food.
I'm not crazy about sausages, so I probably won't. But I don't hold them responsible, it's the landlord.
I'm not crazy about sausages, either, but I'll give them a try. I had a sausage at Smoking Rooster last week, and it was good, though not filling. One friend said it didn't have enough flavor. I mostly use sausage for flavor in one pot dishes.

There are many vegetarian and vegan options in the U.S. Virgin Islands, and I listed most of them on HappyCow.net. I have not found the other Caribbean islands to have as many vegan options. We even have an annual Vegan Food Fair.
Islands have names. Please use them. Each island is unique and referring to any of them as "the islands" is, IMO, disrespectful of their distinct culture and identity.

Seriously? Sounds like the Christmas spirit has not only totally failed to reach you but that Jumbie Scrooge is in residence! Better get on the horn to the Department of Tourism and berate them for encouraging visitors to "come to the islands" ...:D
