Cooking Wahoo

Good Afternoon!
I love wahoo, but have never cooked it myself!
I bought a nice little piece and would like to know how should I cook it?
Sorry, but I don't have a grill......so I am limited to oven or stovetop.
Any info would greatly appreciated !! Thank you!

YUM! A little olive oil and lemon pepper and pan sauted would be lovely. 😉

P.S. Don't overcook it!!

Here is a delicious recipe. It also works for chicken, shrimp, anything! Cooking times shown are for wahoo.

Wahoo Marinade
1/2 cup melted butter
1/2 cup olive oil
6 garlic cloves, crushed
1/3 cup chopped cilantro
1 tbsp Cajun seasoning
Juice of 2 lemons

Marinate wahoo for several hours in the fridge.
Pan fry in the marinade on medium heat, 4 minutes each side (depending on thickness), uncovered.
Serve with marinade over pasta or rice.

Don't be afraid to under cook it, either. It is delicious medium rare to medium.

My favorite way to cook just about any fish. You might also saute a little garlic ,in that olive oil, and then a splash of white wine. Not too much....just a splash, and finish with fresh squeezed lemon juice. YUM!!

When we lived on St. Thomas, Marina Market had a fish rub (in a blue tin, at the meat/fish counter). It was wonderful. I used it mostly on salmon (instead of the lemon pepper). Just noticed you are on STX, but anyone on STT might enjoy it....IF they still have it.

I did the olive oil and lemon pepper last night.... Was very good!
Will try some of the other ideas posted here as well.....
They all look great!

brush a little oil on it and sprinkle sea salt and fresh cracked pepper on it.

get a saute pan pretty hot, almost smoking with a little oil in it

place the filet in the pan and brown it, then flip it and brown the other side

remove and set on a plate

(that works for basically any protein)

the pan should still be hot and have a brown base in it.

add a little more oil and some chopped shallots, onions, basically anything you have, just chop it up small

sweat until translucent, then add a bit of white wine and push around with a wooden spoon to get all that good brown stuff up

add a sprig of some kind of herb like thyme and a bit of stock (water will do) and reduce a little more

if you want it to be a little richer, add a little butter and melt, then finish with a squeeze of lemon

pour it over the fish filet and enjoy

The fish will be seasoned, the sauce won't over power the Wahoo and it should all work together well.

Combine 2 cups Vidalia Onion dressing with 1/4 cup virgin olive oil and 1/4 cup lemon juice (bottled is fine!) Shake well. Hint - this not only works beautifully with any fish recipe but is also a great salad dressing.

For one steak, heat to sizzling in an uncovered sautée/fry pan, 1 tsp salted butter and 1 tsp olive oil OR 2 tsp ghee (which I prefer and is available at Plaza Extra on both STT and STX).

Add the fish steak, quickly sear on both sides.

Lower the heat, add 1 level tsp chopped minced garlic in oil (again something readily available and refrigerates indefinitely. Fresh garlic purists can rant on until the cows come home but ...)

Briefly swirl/stir, then add enough of the Vidalia mixture to reach up about 1/3 of the fish steak. Tightly cover the pan and in 1-2 (max) minutes you'll have the perfect dinner.
