Calling all cooks and waitstaff
I was hoping to get a little advice from a few people in my trade. I'm 24 years old and been in the cooking biz for the better part of 9 years. I"ve worked every position up to and including Assistant head chef. Cooking is my passion and is one of the reasons I'm making my move to stt. I'm looking to work with a different type of cusine. I've been in New England my whole life and am very bord with the culinary scene here. I'm dying to get down to your island and get my hands into the local flavor. I am moving may 12th and will be spending the first few days job hunting. I am looking for a regular cooking position not a assistant chef spot and was hoping I could get some input on where I might find some decent "local" flavor resturants. Any thoughts on where to go would cut my search time down greatly and would be a big help. I am staying in charlotte amalie at first but am thinking that the red hook area is where I want to end up eventually. So anywhere around there would be awsome. I will be picking up a car so if there is a good distance to go I dont mind if it's the right type of place. Thank you all very much, this site has been HUGE help.
You might want to check out www.viphonebook.com for a list of restaurants. Obviously, this will not let you know who's hiring, but at least you'll have a full list of restaurant names, numbers and addresses to go from. Also, checkout some of the local papers-they have classified sections with available job openings.

Now to the Island cooking. When we visited StX I found the cusine to be either traditional American, Italian etc. or what many called the Island cuisine which was really Porto Rico or spanish cusine. I saw little of real local foods used in the dishes other than some seafood. I would have loved tasting some breadfruit, tropical cherries, mangoes, or passion fruit. All the things you would call native Island fruits and vegetables. Non of the places we checked out served either. Perhaps you are the person who will start using some of them in your dishes ;))

Local foods - you can try Cuzzins in downtown Charlotte Amalie. And Gladys and Lillians Grill also downtown.
